INGREDIENTS

Good, fresh ingredients are essential to good sushi. Getting them all prepared before you roll is also helpful.

Rice vinegar is used, along with salt and sugar, to season the cooked sushi rice, and sesame oil is great in connection with soy sauce to flavor the finished sushi.

Unless you are having sashimi or nigiri, you need something to hold your sushi together. Nori is most common (get the darker kinds!), but you can also use rice paper if you don't care for nori.

Perhaps the most common flavoring for sushi is wasabe, shown here in various styles, along with a couple of other common sauces.

Roasted sesame seeds and mixtures of nori and dried fish also add unique flavors.
